This is great in the cool winter months but also in the spring when the weather isn't consistently warm yet. I know the sausage and spinach sounds like something kids would from but try it our kids loved it.
10 oz. sweet turkey Italian sausage
Cooking spray
1 cup onion
2 tsp. minced onion
½ cup water
1 15oz can cannelloni beans, rinsed and drained
1 14.5 oz can organic stewed tomatoes, undrained
1 14oz can chicken broth
2 cups baby spinach
1 tsp. basil
1 tsp. oregano
2 tbsp. grated Romano Cheese
Remove casings from sausage. Cook sausage in a large saucepan coated with cooking spray over high heat until browned; stirring to crumble. Add onion and 2 tsp. garlic to pan; cook for 2 minutes. Stir in ½ cup water, beans, tomatoes, broth, basil and oregano. Cover and bring to a boil. Uncover and cook for 3 minutes or until slightly thick. Remove from the heat, and stir in spinach. Sprinkle with 1 ½ tsp, cheese.
Serving size: 1 ½ cups ( Our daughter will eat ½ a serving size while our son will eat a whole)
