The kids really loved having this classic sloppy joes dish for dinner.  Easy to make and great for leftovers.

 

1 teaspoon canola oil

1 cup finely chopped onion

1 cup chopped green bell pepper

2 garlic cloves, minced

1 1/2 pounds ground beef

1 (6-ounce) can tomato paste

2 teaspoons chili powder

1 teaspoon ground cumin

1/2 teaspoon salt

1 (14-ounce)  can chicken broth

15-ounce corn, rinsed and drained

6 whole wheat hamburger buns

1. Heat oil in a large nonstick skillet over medium- high heat. Add onion, bell pepper, and garlic, saute 3 minutes. Add meat to pan; cook 5 minutes or until browned, stirring to crumble. Stir in tomato paste, cook 2 minutes. Add chili powder, cumin, salt, and broth. Reduce heat, and simmer 12 minutes or until thickened, stirring occasionally. Stir in corn; cook for 2 minutes or until thoroughly heated.

2. Spoon about 1 cup meat mixture on bottom half of each hamburger bun, cover with top half of each bun.
