Recipe:

2 Extra large Eggs

1/3 Cup Whole Ricotta Cheese

2 tbsps Canned Pumpkin

2 tsps Nuva

1 tsp Baking Powder

1 tsp Cinnamon

1 pinch Baking Soda

dash Allspice

dash Ground Cloves

3 Tbsps Flaxseed Meal

1 Tbsp Buckwheat Flour

Whip eggs in food processor or by hand until frothy. Add cheese and pumpkin and beat until smooth. Add Nuva to taste. Heat a no-stick skillet or griddle with a little butter as needed. Add remaining ingredients and pulse to blend. Gently scrape the batter into a small bowl. When griddle is hot, spoon batter onto it. Cook over medium heat until edges are set and large bubbles appear across the surface - about 1 min. Carefully flip and cook for half as long as on the first side or until golden. Serve with a drizzle of syrup*

* as an alternative, try raw honey as a sweetener
