Yield: 8 servings Prep: 15 minutes  Slow Cooker: 8 hours

 

1/3 cup all-purpose flour

2 pounds beef stew meat, cut into bite size pieces

4 cups diced peeled baking potato (1 1/2 pounds)

2 cups chopped onions (1 large)

1 cup sliced carrot

1 cup chopped red bell pepper (1 medium)

1/3 cup ketchup

1 Tbsp. Worcestershire sauce

2 tsp. paprika

2 tsp. minced garlic

1 tsp. salt

1 (10oz.) can beef broth

 

Combine flour and beef in a medium bowl; toss well. Combine beef mixture,
Potatoes, and remaining ingredience in an electric slow cooker. Cover and cook on Low for 8 hours. I used a cast iron dutch oven and cooked it until the veggies were soft. Either way it is delicious.
